Ingredients:
650 grams of flank/skirt steak
1 tbsp fine salt
½ tsp ground black pepper
1 tbsp garlic powder
1 tbsp chilli powder

Method:
Partially freeze your steak so it’s easier to slice Heat your oven to 100 degrees Celsius for a low and slow cooking process Line a two large oven trays with greaseproof paper Cut the steak into 2-inch strips, cutting against the grain The strips should be thin, around 1/8 inch thick Let the steak defrost completely before covering it in cling film and pounding the strips with a mallet so they’re even thinner Combine your spices in a bowl Take each strip of steak and cover it in the spice mixture Arrange your strips across the trays so they do not touch Place in the over for 3-hours, rotating the trays halfway through Once cooked, take your strips, and place them on a cooling rack, with some tin foil underneath to catch and drips Your strips will dry out as they cool and once cold, they can be stored in an airtight container in the fridge
